POACHED PEARS
The wonderful aroma alone is enough to put a smile on every guest's face!
Main Ingredients:

4-6 pears, one per person

1 to 2 bottles of red wine (see cooking directions)

1 stick of cinnamon

7 whole cloves
-
1 crushed nutmeg (not grated)

1 large orange sliced into six segments - no need to peel

1 star anis
-
15 g fresh ginger
-
1 tablespoon granulated sugar
For the chocolate sauce

125g dark chocolate
-
200 ml single cream
-
1 tablespoon caster sugar
-
1 crushed nutmeg (not grated)

25g butter
-
1 tablespoon of orange liqueur
Cooking Directions
STEP 1

Remove the skin from the pears, leave the stalks uncut.

Slice the orange into six segments, retaining the skin

Place all the main ingredients in a large pan. Gently bring to the boil, and then place on low heat to simmer - use enough red wine to ensure the pears are submerged entirely to absorb the liquid and simmer for about 25 minutes - they will change colour.
STEP 2

The chocolate sauce - make it (or re-heat) when the pears are nearly cooked

Break up or cut up the chocolate into small pieces - if you prefer melt it in glass bowl over boiling water

Warm the cream till it bubbles, then add all the remaining ingredients, except the liqueur

Stir till silky smooth then add the liqueur just before serving
STEP 3

Drizzle the chocolate sauce on each serving plate then stand a single pear upright on the plate and serve.
